Rena’s Apple Cake
1 cup oil
2 cups sugar
2 eggs
3 cups diced, unpeeled apples
1 cup nuts (eg., walnut or pecan)
3 cups flour
1-1/2 teaspoon baking soda
1 tsp salt
1 tsp vanilla
1 tsp cinnamon
½ tsp nutmeg
Also ½ cup sugar and 1 tsp cinnamon to mix and sprinkle on top before baking.
Mix together oil, sugar, and eggs. Add apples. Then add dry ingredients, mixing together with hands. Press into an oiled 9x13 pan. Sprinkle with sugar-cinnamon mixture. Bake at 375 degrees for 40-45 minutes. Serves 12. Don’t cover the cake when storing because it will turn soggy; simply keep on the counter for the short time before it’s devoured.
