Jeff’s Amaretto Pears

A Recipe for 2 servings

2 T butter 
1 T sugar 
¼ t grated lemon peel 
1 large pear, the brighter the color the prettier this dessert is-- cored, cut in half lengthwise 
2 T Amaretto 
2 T slivered almonds, if desired

In a small microwave-safe casserole dish, cook butter on high until melted. Remove from microwave, stir in sugar, lemon peel and Amaretto. Place pear halves, cut side down in dish. Sprinkle with almonds, if desired. Cover lightly. Microwave on high 3 to 3 ½ minutes or until pear is tender. Let stand covered 5 minutes. Place each pear half on a serving plate. Using a sharp paring knife, leave top intact and cut 6 lengthwise slits completely through pear. Gently separate slices, fanning out and laying at a 45 degree angle. Spoon sauce in cooking dish over pears. To garnish, place mint leaf at step end.
